This creamy beef stroganoff recipe is like a grown-up, sophisticated Beefaroni and I couldn’t be more obsessed OMG! Even better: It only cost me under $18 to make. Even better than that: It takes under 20 minutes to make! MOM WIN!!!

Creamy Beef Stroganoff

Prep Time 5 minutes
Cook Time 15 minutes

Ingredients

  • 1 tbsp unsalted butter
  • olive oil
  • 1/2-1 lb Sirloin steak (cut into thin strips)
  • 1/2 large yellow onion (sliced)
  • 2 spigs fresh thyme
  • 2 basil leaves
  • 2 large cloves of garlic (minced)
  • 3-4 cups beef broth (set 1/2 cup to the side)
  • 3 cups chopped kale
  • 1-2 tbsp worcestershire sauce
  • 1 pint heavy whipping cream
  • cooked egg noodles
  • season salt
  • black pepper
  • garlic salt
  • 1 tsp red pepper flakes

Instructions

  • Heat olive oil and butter in a hot pan
  • Add sirloin and season with season salt, garlic powder and black pepper. cook until browned on all sides (about 4-6 minutes) then remove from pan (leave juices in pan).
  • Add onions to the pan and cook until nearly translucent. Then add basil, thyme and garlic. cook for an addition 2 minutes while continually stirring.
  • Add 1/2 cup of broth to de-glaze the pan. Cook for 30 seconds and scrap up the bits from the bottom of the pan.
  • Add kale to the pan and mix with onions and herbs.
  • Add remaining broth, Worcestershire sauce and cook for 3-4 minutes. Bring to a boil.
  • Add heavy cream and cook for 2 minutes until the mixture comes to a boil.
  • Return steak to the pan and cook for an additional 2 minutes.
  • Add noodles to the mix and red pepper flakes. Taste and season with more season salt if necessary. Serve immediately.

Ingredients

  • 2 lbs Flank Steak (sliced)
  • 1/4 cup water
  • 2 tbsp worcestershire sauce
  • 1/3 cup apple juice
  • Trader Joes Chile-Lime seasoning
  • 1/2 tsp red pepper flakes
  • 2-3 minced cloves of garlic
  • 3 sliced bell peppers
  • 1 medium onion (slice)

Instructions

  • Combine everything but the, steak, onions and peppers in a bowl. Add steak and marinate for at least two hours.
  • Sear peppers and onions in a hot skillet until onions are translucent and peppers are tender and a little charred. Remove from pan and return pan to the heat.
  • Add a tbsp of oil to the pan and add steak to the hot pan. Sear until cooked to your desired doneness. We like medium well so I cooked for about 4-7 minutes.
  • Return onions and peppers to the pan and combine. Serve immediately over rice or in a tortilla with guac and sour cream.

Honey Sriracha Chicken Wings

Tender, Spicy & Sweet wings
Prep Time 2 hours
Cook Time 40 minutes
Servings 4

Ingredients

Brine

  • 6 cups warm water
  • 1/3 cup Kosher salt
  • 1/4 cup sugar
  • 1/3 cup apple Juice
  • 1/4 cup apple cider vinegar
  • 2 tbsp minced garlic
  • 1 bay leaf
  • 1/2 tbsp black pepper

Chicken wings

  • olive oil
  • 12 chicken wings
  • Tony Chacheres Creole Seasoning

Honey Sriracha Glaze

  • 1/2 cup honey
  • 1/3 cup Sriracha sauce
  • 2-3 tbsp rice wine vinegar
  • black pepper
  • garlic powder

Instructions

  • Combine all brine ingredients in a large bowl and mix until sugar and salt are dissolved.
  • Add chicken to the brine, cover and refrigerate for at least two hours.
  • Once chicken has marinated for the appropriate amount of time, preheat oven to 375.
  • Line a sheet pan with aluminum foil and grease with olive oil.
  • Remove chicken from brine, dry with clean paper towel, and line on top of prepared sheet pan. Then sprinkle with creole seasoning.
  • Bake for 25-30 minutes or until chicken is fully cooked through and remove from the oven. Then turn oven to broil.
  • While the chicken cooks, combine all of the glaze ingredients and set aside.
  • Remove chicken from the oven and flip over (skin side down). Baste with glaze and return to the oven for 2-3 minutes or until glaze browns a bit.
  • Remove the chicken from the oven, flip over, baste again and return to the oven for 2-3 minutes.
  • Remove the chicken from the oven, baste again and return to the oven one last time (for 2-3 minutes).
  • Baste one last time with remaining glaze and serve:)

Ingredients

  • 5 Ears of Corn
  • 2 tbsp sour cream
  • 1/4 cup mayonnaise
  • 1 1/2 tbsp lime or lemon juice
  • 1/4 tsp garlic powder
  • 1 cup grated cojita cheese
  • Paprika
  • salt
  • Chopped cilantro for garnish (optional)

Instructions

  • Preheat oven to 400.
  • Line a baking pan with aluminum foil. Brush corn with a light amount of olive oil. Place in oven for 35-40 minutes or until corn is tender.
  • Once corn is cooked, allow corn to cool for 5 minutes.
  • While corn is cooling, mix sour cream, mayo, lemon juice, garlic powder and salt.
  • Brush sour cream/mayo mixture all over corn ears.
  • Immediately sprinkle with cojita cheese and sprinkle with paprika and cilantro.
  • Serve immediately and enjoy:)

Bang Bang Chicken

Prep Time 7 minutes

Ingredients

  • 1 lb chicken tenderloins (diced into chunks)
  • 1 cup panko crumbs
  • 1 1/2 cups flour
  • 1 egg
  • 1/2 cup water
  • 1 cup Mayo
  • 4 tbsp Sriracha
  • 3 tsp white sugar
  • 4 tsp rice wine vinegar
  • 1 1/2 cups veggie oil
  • salt
  • pepper
  • garlic powder
  • Flavor God Everything Spicy optional

Instructions

  • Generously season chicken with salt, pepper and garlic powder. Set aside.
  • Combine panko crumbs and 1 cup of flour. Season generously with salt, pepper, garlic powder and Flavor God (optional but soooo worth it.)
  • Mix egg and water. Beat until well combined.
  • Pour 1/2 cup flour to a large zip lock bag. Add chicken, seal bag and shake vigorously until chicken is well coated.
  • Remove chicken from the bag and dust off excess flour. Dip in egg mixture and then in panko mix.
  • Heat oil in pan on medium high heat. Once hot, drop chicken in the pan making sure not to crowd the pan. Cook until golden brown and cooked through (around 6-7 minutes). Once cooked, remove from pan and set on a paper towel lined dish.
  • Combine mayo, sriracha, sugar and rice vinegar. Toss the chicken in the mayo mixture until well coated. Serve immediately!

Creamy Sausage and Kale Pasta

Ingredients

  • 16 oz Ground Italian Sausage
  • 8 oz Can of Fire Roasted Tomatoes with Garlic
  • 1 tbsp Tomato Paste
  • 1 cup Heavy Cream
  • 1-2 cups Chopped kale
  • 2 cups Bow tie or penne pasta
  • 1/2 tbsp Garlic powder
  • Salt & Pepper

Instructions

  • Bring a pot of water to a boil. Salt the water and add 1 tablespoon of olive oil. Drop pasta in water and cook according to the directions on the box.
  • Heat a separate pan to medium high heat. Add ground sausage and break apart with wooden or plastic spoon. Cook until fully cooked through and slightly golden.
  • Add tomato paste to the sausage and cook for 1 minute.
  • Add kale to the sausage mixture. Once the kale is incorporated, season with salt, pepper and garlic powder. (I also used Flavor God Everything Spicy because that’s my favorite. You can also sub season salt for everything).
  • Add tomatoes to the sausage/kale mixture and cook for 5 minutes.
  • After 5 minutes add the heavy cream and bring to a boil. Turn off the heat once it comes to a boil. Add cooked pasta and mix well.
  • Serve immediately.

Spring time is here and that means that beautiful, colorful veggies are in season! BUT as many of us Momma’s know, getting kids to eat veggies is a damn chore. How do I get my kids to eat their veggies? I have them help me in the kitchen! They take so much pride in the meals they helped me prepare that they down the veggies with no problems at all:)

This quick and easy meal is not only delicious but super kid-friendly to prepare! And which kid doesn’t like cheese filled noodles?!?! My oldest and I prepared this with pesto sauce but you can use marinara or alfredo sauce if that’s your fave!

Pesto Chicken Tortellini with Spring Veggies

Prep Time 3 minutes
Cook Time 7 minutes
Total Time 10 minutes
Servings 4 People

Ingredients

  • 9-12 oz Fresh Cheese Tortellini Normally found near the hummus and cheese.
  • 1 cup Chopped asparagus
  • 1 cup Cherry Tomatoes I found some beautiful tricolored tomatoes but the regular work just the same.
  • 9 oz Pre-cooked chicken strips
  • 1/4 – 1/2 cup Pesto sauce I used jar but I suggest using fresh
  • Salt, pepper and season salt

Instructions

  • Place pan on stove and heat to high heat. Once hot, add 1 tbsp of olive oil and drop asparagus in the pan. Season with salt and pepper and cook for 3 minutes.
  • Bring a pot of water to a boil and drop in tortellini. Cook for 3 minutes.
  • While the tortellini is cooking, add the chicken and tomatoes to the asparagus. Season with salt, pepper and season salt.
  • Once cooked, add tortellini and 1/2 cup of the water it was cooked in, to the chicken/veggie mixture. Then add pesto sauce and mix.
  • Turn off heat and serve immediately.

My husband and boys are meat and potato kind of guys. They love meatloaf, ribs, steak and everything in between but one of their favorite dishes is this hearty beef stew served over mashed potatoes.

This particular time, I made this on the stove because I wanted a richer sauce. But normally I just throw all of the ingredients (but only 1 cup of beef broth) in the crock pot and cook it on low for 6 hours. It still have the same, delicious flavor but a looser, more liquidy (is that even a word?) sauce.

Rich & Hearty Beef Stew

Prep Time 10 minutes
Cook Time 2 hours
Total Time 2 hours 10 minutes

Ingredients

  • 1 1/3 – 1/2 lb Stew meat
  • 1/2 Large yellow onion (diced)
  • 1 cup Carrots (chopped)
  • 2 stalks Celery (chopped)
  • 1 cup Baby bella mushrooms (quartered)
  • 1/2 tbsp Minced garlic
  • 1/2 Cup Fire Roasted Diced Tomatoes
  • 1 Pack Lipton Soup Mix
  • 3 tbsp Worcester sauce
  • 2 cups Beef Broth
  • 1 cup Water
  • 1 tbsp Flavor God Everything Spicy (optional)
  • 1 tsp Garlic powder
  • Black Pepper

Instructions

  • Place large plan on a the stove at high heat. Once the pan is very hot, place stew meat in pan making sure to sear each side very well (this locks in the juices).
  • Remove meat from pan and set aside. Turn heat to medium-high and add onions, carrots and celery. Cook, stirring frequently, until onions are translucent.
  • Add garlic and mushrooms to the pan and saute for 1-2 minutes. Make sure to keep stirring the veggies so the garlic doesn’t burn. 
  • Return the meat back to the pan and add tomatoes, onion soup mix, flavor god, garlic powder, salt and pepper.
  • Once combined add Worcester sauce, beef broth and water. Bring to a boil, then cover and reduce heat to low. Cook for two hours or until meat is tender.
  • Serve over mashed potatoes.
