The holiday season is upon us and I couldn’t be more excited! I always do a lot of cooking during this festive season but for Thanksgiving, in particular, I’m in charge of the greens, string beans, ham and dessert. But this year I decided to try my hand at Mac and Cheese. After months of recipe testing, I have come up with what I would call the perfect Mac and Cheese (Yes. I’m THAT impressed with this recipe lol). I’ve had all my family test it out for approval beforehand just to make sure my confidence in this recipe is warranted lol! I use a few non-traditional ingredients but I PROMISE it all comes together so beautifully!

 

It’s no secret that I love being in the kitchen but having beautiful cookware makes me love it even more:) So my new gorgeous Caraway bakeware set definitely gave me the confidence to take on this recipe. The 9×13 rectangle pan fit my Mac and Cheese perfectly and the clean up was a breeze!

Gooey, Cheesy Baked Mac and Cheese

Prep Time 15 minutes
Cook Time 32 minutes
Servings 9

Ingredients

  • 1 lb Elbow Macaroni
  • 1 cup Sour Cream
  • 1 egg
  • 2 cups Heavy Cream
  • 1 cup whole milk
  • 8 oz cream cheese cut into cubes
  • 2 cups 4 State Cheddar cheese grated
  • 2 cups Sharp Cheddar grated
  • 2 cups Medium Cheddar grated
  • 1 cup White Cheddar grated
  • garlic powder
  • salt
  • pepper
  • paprika

Instructions

  • Preheat your oven to 350.
  • Bring a large pot of water to a boil, season generously with salt (very important step) and add about one tbsp of olive oil. Cook dry pasta according to the package directions but subtract two minutes from the cooking time. The strain and set aside.
  • In a large pot add milk, heavy cream and cream cheese. Cook on medium low heat just until the cream cheeses starts to melt. Once melted add all of the remaining cheese (except one cup that you'll sprinkle on top). Season with garlic powder, salt and pepper. Cook on low until the cheese is melted and everything is well incorporated.
  • In a large bowl mix the sour cream and egg. Then gently fold in the cooled macaroni.
  • *This next step is very important so you don't prematurely cook the egg!* Gently ladle in one large spoonful of the melted cheese mixture and mix it in. You want to do this three or four times. Then pour in the remaining cheese mixture and gently mix until well incorporated.
  • Add your mixture to a 9x13 non-stick pan. Top with remaining cup of cheese and sprinkle with pepper and paprika.
  • Bake for 20-30 minutes until bubbly and golden brown. Allow to cool for about 10 minutes before serving and enjoy!

Creamy Beef Stroganoff

Prep Time 5 minutes

Ingredients

  • 1 tbsp unsalted butter
  • olive oil
  • 1/2-1 lb Sirloin steak (cut into thin strips)
  • 1/2 large yellow onion (sliced)
  • 2 spigs fresh thyme
  • 2 basil leaves
  • 2 large cloves of garlic (minced)
  • 3-4 cups beef broth (set 1/2 cup to the side)
  • 3 cups chopped kale
  • 1-2 tbsp worcestershire sauce
  • 1 pint heavy whipping cream
  • cooked egg noodles
  • season salt
  • black pepper
  • garlic salt
  • 1 tsp red pepper flakes

Instructions

  • Heat olive oil and butter in a hot pan
  • Add sirloin and season with season salt, garlic powder and black pepper. cook until browned on all sides (about 4-6 minutes) then remove from pan (leave juices in pan).
  • Add onions to the pan and cook until nearly translucent. Then add basil, thyme and garlic. cook for an addition 2 minutes while continually stirring.
  • Add 1/2 cup of broth to de-glaze the pan. Cook for 30 seconds and scrap up the bits from the bottom of the pan.
  • Add kale to the pan and mix with onions and herbs.
  • Add remaining broth, Worcestershire sauce and cook for 3-4 minutes. Bring to a boil.
  • Add heavy cream and cook for 2 minutes until the mixture comes to a boil.
  • Return steak to the pan and cook for an additional 2 minutes.
  • Add noodles to the mix and red pepper flakes. Taste and season with more season salt if necessary. Serve immediately.

Here’s another super easy recipe that is sure to impress! This quiche is one of my favorite dishes when hosting a brunch or even as a healthy breakfast meal prep for the week. It’s very easy to make and extremely versatile allowing you to use which ever filling ingredients you’d like as long as you use the same egg/cream base☺ You can make it vegetarian or chock it full of ham! For this version, I chose bacon, caramelized onions and kale. It was AMAZING! It was fluffy yet creamy and the bacon pulled it all together!

Cook Time 35 minutes

Ingredients

  • 6 large eggs
  • 1 cup heavy cream
  • 2 cups chopped kale
  • 1/2 onion (diced)
  • 4-5 slices of bacon (diced)
  • 1 tsp diced garlic
  • 1/2 cup sliced cherry tomatoes
  • 1 cup Italian mix cheese
  • salt, pepper and garlic powder

Instructions

  • Preheat oven to 350
  • Mix eggs, cream and seasonings. Set aside.
  • Cook bacon on medium high heat. Once cooked, remove from pan and set aside.
  • Return pan to the burner and reduce heat to low. Add diced onion and cook slowly for 20 minutes for proper caramelization. (You can cook them quickly if you like but trust me when I say that caramelized onions are worth the wait). Once cooked, add kale and garlic and cook until kale is wilted.
  • Spray an 8inch nonstick, baking dish with oil. Line with cooked bacon, then cooked veggies, then cheese and finally the egg mixture. Top with sliced cherry tomatoes if you’d like.
  • Bake for 35-40 minutes or until the center is firm.
  • Allow to cool (quiche will shrink a little). Slice and enjoy!

Nothing like this warm, aromatic soup to battle this cold winter weather! This recipe looks like it has a lot of steps but it’s soooo easy to make! I never serve mine the day of because it tastes way better the next day!

Ingredients

  • olive oil
  • 1 diced onion
  • 3/4 cup diced carrots
  • 3 tbsp red curry paste I use the Thai Kitchen brand
  • 1 tbsp grated ginger
  • 1 1/2 tbsp minced garlic
  • 4 cups chicken broth I used chicken bone broth
  • 2 14 oz. cans of coconut milk
  • 2 tbsp Soy Sauce
  • 1 tbsp fish sauce
  • 1 1/2 tbsp brown sugar
  • the zest of one lime
  • 2 dried basil leaves
  • 1 red bell pepper
  • 1 1/2 cups broccoli
  • 1/4 cup chopped cilantro
  • 1-3 tbsp Sriracha Depends on how spicy you like it
  • 1 whole shredded chicken I use the whole roasted chickens from the grocery store and shred them.

Instructions

  • Add carrots and onions to a medium-high heat pan drizzled with olive oil. Cook until onions are translucent.
  • Add curry paste, garlic and ginger. Cook for one minute.
  • Add chicken broth, soy sauce and fish oil. Bring to a simmer.
  • Add brown sugar, lime zest and bay leaves. Simmer again.
  • Add coconut milk, broccoli and bell peppers. Cover and bring to a boil. Once boiling, reduce heat and cook (covered) until broccoli is tender but not mushy).
  • Add chicken, cilantro, sriracha, salt and pepper. Turn off heat and serve.

  • 1.5 lbs skinless boneless chicken thighs or breasts cut into chunks
  • 1/3 cup Soy Sauce
  • 1/4 cup Rice wine vinegar
  • 1/4 cup sugar
  • 1 Tbsp Sesame Oil
  • 1 tbsp Sriracha (optional)
  • 1/2 tbsp minced garlic
  • 1 tsp minced ginger
  • Salt & Pepper
  • 1 tsp corn starch

Instructions

  • Mix all ingredients except for the chicken, cornstarch and salt/pepper. Set aside.
  • Season Chicken with salt and pepper.
  • Add chicken to hot pan over high heat and sear on all sides.
  • Once fully cooked through, add sauce and reduce heat to medium/high. Cook for 2-3 minutes- allowing the sauce to bubble. Don't walk away from the pan as the sauce could easily burn.
  • After 2-3 minutes sprinkle the cornstarch over the chicken and cook for an additional minute.
  • Serve over white rice and enjoy.

  • 1 cup diced, smoked sausage (I used polish kielbasa)
  • 3 cups shredded chicken or turkey
  • 1/2 diced onion
  • 1 cup diced carrot
  • 1 cup diced celery
  • 1 sprig thyme
  • 1/2 sprig rosemary
  • 1 cup sliced baby bella mushrooms
  • 4 cups chicken broth
  • 4 cups water
  • 1 bay leaf
  • 2 large handfuls of chopped kale
  • 1 cup heavy cream
  • Season Salt
  • Black Pepper
  • Flavor God Everything Spicy (optional)

Instructions

  • Saute Sausage. Once browned, add onion.
  • Once onions become translucent, add carrots, and celery. Saute for 5 minutes.
  • Add rosemary, thyme and bay leaf. Season and saute for an additional 5 minutes.
  • Add mushrooms and turkey. Saute.
  • Add broth, water and bay leaf. Bring to a boil.
  • Once boiling, add two large handfuls of kale. Reduce heat to medium low and cover for 15 minutes.
  • Turn off heat and add heavy cream.
  • Serve alone or over rice. Enjoy!

  • 2 cups half and half
  • 1 lb bacon (cooked and chopped)
  • 2 cups cheddar cheese
  • black pepper
  • season salt

Instructions

  • Melt oil and butter in a soup pot on medium high heat.
  • Add onions, carrots, celery and garlic. Cook until onions are translucent.
  • Add diced potatoes and season with black pepper and season salt.
  • Add chicken broth and bring to a boil. Once boiling, cover and reduce the heat to medium low. Cook until potatoes are tender.
  • Turn off the heat. Remove half of the cooked veggie mixture and add it to your blender and blend until smooth. (Be careful when blending hot liquids. I left my top ajar to allow the steam to escape while blending.)
  • Return blended veggies to the pot. Add cream, cheese and bacon.
  • Enjoy:)

Ingredients

  • 2 lbs Flank Steak (sliced)
  • 1/4 cup water
  • 2 tbsp worcestershire sauce
  • 1/3 cup apple juice
  • Trader Joes Chile-Lime seasoning
  • 1/2 tsp red pepper flakes
  • 2-3 minced cloves of garlic
  • 3 sliced bell peppers
  • 1 medium onion (slice)

Instructions

  • Combine everything but the, steak, onions and peppers in a bowl. Add steak and marinate for at least two hours.
  • Sear peppers and onions in a hot skillet until onions are translucent and peppers are tender and a little charred. Remove from pan and return pan to the heat.
  • Add a tbsp of oil to the pan and add steak to the hot pan. Sear until cooked to your desired doneness. We like medium well so I cooked for about 4-7 minutes.
  • Return onions and peppers to the pan and combine. Serve immediately over rice or in a tortilla with guac and sour cream.

Honey Sriracha Chicken Wings

Tender, Spicy & Sweet wings
Prep Time 2 hours
Cook Time 40 minutes
Servings 4

Ingredients

Brine

  • 6 cups warm water
  • 1/3 cup Kosher salt
  • 1/4 cup sugar
  • 1/3 cup apple Juice
  • 1/4 cup apple cider vinegar
  • 2 tbsp minced garlic
  • 1 bay leaf
  • 1/2 tbsp black pepper

Chicken wings

  • olive oil
  • 12 chicken wings
  • Tony Chacheres Creole Seasoning

Honey Sriracha Glaze

  • 1/2 cup honey
  • 1/3 cup Sriracha sauce
  • 2-3 tbsp rice wine vinegar
  • black pepper
  • garlic powder

Instructions

  • Combine all brine ingredients in a large bowl and mix until sugar and salt are dissolved.
  • Add chicken to the brine, cover and refrigerate for at least two hours.
  • Once chicken has marinated for the appropriate amount of time, preheat oven to 375.
  • Line a sheet pan with aluminum foil and grease with olive oil.
  • Remove chicken from brine, dry with clean paper towel, and line on top of prepared sheet pan. Then sprinkle with creole seasoning.
  • Bake for 25-30 minutes or until chicken is fully cooked through and remove from the oven. Then turn oven to broil.
  • While the chicken cooks, combine all of the glaze ingredients and set aside.
  • Remove chicken from the oven and flip over (skin side down). Baste with glaze and return to the oven for 2-3 minutes or until glaze browns a bit.
  • Remove the chicken from the oven, flip over, baste again and return to the oven for 2-3 minutes.
  • Remove the chicken from the oven, baste again and return to the oven one last time (for 2-3 minutes).
  • Baste one last time with remaining glaze and serve:)

  • 2 tbsp sour cream
  • 1/4 cup mayonnaise
  • 1 1/2 tbsp lime or lemon juice
  • 1/4 tsp garlic powder
  • 1 cup grated cojita cheese
  • Paprika
  • salt
  • Chopped cilantro for garnish (optional)

Instructions

  • Preheat oven to 400.
  • Line a baking pan with aluminum foil. Brush corn with a light amount of olive oil. Place in oven for 35-40 minutes or until corn is tender.
  • Once corn is cooked, allow corn to cool for 5 minutes.
  • While corn is cooling, mix sour cream, mayo, lemon juice, garlic powder and salt.
  • Brush sour cream/mayo mixture all over corn ears.
  • Immediately sprinkle with cojita cheese and sprinkle with paprika and cilantro.
  • Serve immediately and enjoy:)
